Recipes - Darla's Cranberry-Orange Bread


  • 1/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 2 cups flour  
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup orange juice or fresh orange juice
  • 1 cup chopped cranberries  
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut , optional
  • 1/2 cup raisins , optional

Cream butter, add flour, soda, salt, and sugar. Beat egg and add to the orange juice, then pour into flour mixture.  Stir just enough to mix, do not beat. Add cranberries and nuts. Turn into a greased and floured loaf pan. 

Bake at 350º for 1 hour.
